You might have noticed that I took a little hiatus from my blog over the past week. Last Thursday, my husband and I made a quick weekend trip to Disney World! I can not wait to share the details of our trip later, but today I wanted to share one of my favorite Disney inspired recipes with you.
While we were at Disney’s Hollywood Studios last Friday, I had one of my favorite treats, the Carrot Cake Cookie. At one time, you were able to purchase this snack at The Writer’s Stop in Hollywood Studios, but since that location is now gone, you can find the Carrot Cake Cookie at Starbucks.
This treat is two giant cookies of carrot cake that are sandwiched together with the most delicious cream cheese frosting. To make this recipe, you will need:
1 box of carrot cake mix
1 cup of water
2/3 cup vegetable oil
1/2 cup golden raisins
8 ounces of softened cream cheese
8 tablespoons softened butter
1 cup powdered sugar
1/2 cup crushed pineapple, drained
1 tsp vanilla extract
Preheat oven to 350 degrees. Mix carrot cake mix, water, oil, and eggs. Stir in raisins. Drop rounded spoonfuls of carrot cake mix onto greased cookie sheet (it will look like pancakes). Bake cookies in oven for 15 minutes or until golden brown. Allow cookies to cool completely.
Mix cream cheese, butter, powdered sugar, pineapple and vanilla. Spread or pipe cream cheese frosting onto one cookie and place a second cookie on top.
Even my husband, who isn’t a big fan of carrot cake, likes this cookie. I hope you will enjoy it too!
